Embracing the Kalita Wave
3 minutes towards better coffee. How to brew coffee with the Kalita Wave.
The Kalita Wave is a brilliant, steel, flat-bottomed vessel for brewing incredibly delicious, third-wave coffee at home – in just 3 minutes. Think of the process below as a starting point; as you test it out, you may find that making small adjustments – to the timing, temperature, or grind – will lend to your preferred cup of coffee.
Step 0: Mise en place
Preparing for your brew simply requires getting your equipment and beans out. You’ll need your Kalita Wave dripper and carafe, a filter, a gooseneck kettle with boiling water, 25 grams of your preferred coffee ground to semi-fine (between espresso and medium grind), a scale, a timer, and a mug

Step 1: Rinse your filter
Pour water over your filter to rinse it out and heat up your carafe. Then pour out the water from the carafe. While you’re at it, pour a little water in your mug to warm it up!
Step 2: Add your coffee
Pour your coffee – 25 grams of your preferred coffee ground to semi-fine (between espresso and medium grind) – into the filter. Put the dripper and carafe on top of your scale and tare it (zero it out).

Step 3: Pour and swirl
Start your timer. Pour 65 grams of water over the grinds in a circular motion. Then lightly swirl the concoction around to ensure that all the grinds are saturated.

Step 4: Pulsate
After 45 seconds, pour another 65 grams of water over the grinds. Repeat this until you reach 400 grams of water. In other words, continue adding 65 grams of water every 45 seconds until you reach 400.
Step 5: Enjoy
Once all the water has dripped down into the carafe, pour your coffee into your mug of choice. (If you poured hot water in your mug to warm it up, be sure to toss that water before pouring!)
